Mate sour beets

Ingredients for 4 people


  • 500 g of pickled beets
  • smaller apple
  • onions
  • 2 cloves garlic
  • spoons of flour
  • half a teaspoon of ground cumin
  • 3 tablespoons oil
  • Laurel leaf
  • salt and pepper


  • 400 g potatoes
  • 400 g of boiled beans
  • 60 g of vegetable fat
  • 3 cloves garlic
  • onions
  • salt and pepper


1. Sour beets can be pickled in different ways, so try them first and if necessary wash them lightly with lukewarm water.

Peel the potatoes, cut them into larger cubes and cook. Meanwhile drain the boiled beans.

3. In a saucepan place the sour beets, add a tablespoon of water and add the bay leaf.

4. Peel and grate the apple and place in the pot as well. Add salt and pepper to taste, bring to a boil and cook over medium heat.

5. Heat the oil in a pan and fry the finely chopped onion on it. Once there is icing, add the finely chopped garlic cloves, ground cumin and flour. Stir and fry until fragrant, then add the beets and stir again.

6. Towards the end of cooking, add the beans to the potatoes to heat. Then drain the water.

7. Grind the boiled potatoes and beans together and add salt and pepper to taste.

8. In the fat fry the onion and minced garlic and add the butter.
