For the paella place the meat in the heated olive oil, add a few cloves of whole garlic, add a little salt and let it cook. After 15 minutes, add the white beans, minced tomatoes, peppers and sliced carrots, a tablespoon of red peppers, tomato puree, saffron and hot water and cook for about half an hour (ratio rice: water should life 1: 4). After this time, add more rice and cook for another 15 to 17 minutes, set aside and serve.

For the Catalan cream, first add the milk. While this is warming up, separate the yellows from the whites. Add half of the sugar to the milk and half to the yolks. Beat the eggs together with the sugar.

Add the vanilla, cinnamon stick and minced peel of a lemon to the milk while heating. Just before the milk boils, set it aside and add the egg yolk cream. Then pour the cream into fireproof glasses. Fill the container containing the glasses with water to form a water bath. Place in the oven at 130 degrees Celsius and bake for about 20 to 25 minutes. The cups are then placed in the refrigerator to cool our cream, then sprinkled with sugar, caramelized with a kitchen lighter and served.
