Chicken in tomato sauce with spinach

The secret of a wonderful chicken in this recipe is the exact sequence of preparation. Initially, the chicken breasts are placed in warm salted water for 15 minutes. Then rinse with cold running water and wipe with a kitchen towel. Then you have to salt and pepper the chicken well, then bake / cook it. First fry the chicken over medium heat, then lower the heat and cover the pan. So make sure the chicken does not dry out and cook constantly. Raw chicken is poisonous! Once the chicken is cooked over and over, roast it uncovered for a while to get the color, then remove it from the pan and store it for later. Then prepare the tomato sauce and add the chicken only at the bottom. This way you get a juicy chicken and a creamy sauce.

Chicken with tomato sauce can be served with a loaf of bread (integral!), If desired, mix the pasta cooked in the sauce or serve with rice, couscous or quinoa.

Prepare this recipe at a time when tomatoes are in season, but you can also prepare this dish out of season. Then use canned peeled tomatoes – but do not use pre-made tomato sauce, as it contains a lot of sugar and extra salt! Prefer to prepare the sauce at home, with fresh ingredients, as only then can you control what you eat.

INGREDIENTS (for 2 people)

1 pair of chicken breasts

about 5 tomatoes (out of season 1 can of peeled tomatoes)

2 cloves garlic

1 piece of butter

1 handful of fresh spinach

1 branch of basil


PREPARATION

For the chicken breasts to be soft and not dry, which often happens with the breast, first soak in warm salt water for at least 15 minutes. Then rinse your chest under cold running water and wipe with a paper towel. We salt and pepper them on both sides.

Heat a little oil in a pan and then slowly fry the chicken on both sides. Once browned, cover the pan and reduce the heat to allow the breasts to cook / bake continuously. Once the breasts are cooked, uncover the pan and bake for a few more minutes to get a nice color. Then transfer the breasts to a plate and store for later.

Shake the chopped tomatoes in the same pan and cook until softened. Add the garlic and minced butter and continue cooking to get a creamy sauce. Try the sauce and add salt and pepper. Add the spinach and basil to the sauce and stir until the spinach is dry. Put the chicken breasts in the sauce and cook for a few more minutes to heat the chicken and bind the flavors, in the middle you can turn the breasts again.

Serve the chicken on a plate and serve with bread, pasta or any other dish you want.
