Chicken Curry Recipe – Work

This time we will start with our recipes in a slightly further place, towards India, in the wonderful world of spices and seasonings. We will cook chicken curry, which is among the most popular and common.

Alternatively, the main feature of curry is that the main ingredient is usually meat (not necessarily), which floats in a spicy soaked sauce. Mostly of course Indian like curry, turmeric, ginger, cardamom, cinnamon, coriander, various chili peppers,… These spices are often in several types of groups, which Indian families usually collect according to their key and thus the dish gets the grade of its distinctive.

Curry is a dish that the English imported from India during the colonial period and is firmly established on our continent.

Chicken curry is a simple but healthy and delicious dish. It serves rice very nicely. So we combine some healthy proteins with spices and add rice for the addition of carbohydrates (starch). So we have prepared a wonderful and delicious lunch or maybe dinner.

For chicken curry we need:

5 to 6 pieces of chicken thighs (upper part)
Half an onion
2 cloves garlic
Smaller carrots

A piece of green
A pinch of sweet pepper
Coriander, parsley, ground ginger
A pinch of cumin and ginger powder
A pinch of ground chili peppers

Salt, pepper
250 ml tomato puree
Spoons of flour
Slightly shoulder base or half a cube of shoulder

1 dl white wine or water
2 tablespoons sweet cream

Preparation of chicken curry:

Rinse the chicken pieces, dry them and sprinkle with dried spices (cumin, curry, paprika, ginger …) Heat the oil in a pan and pour in the minced onion. When it is slightly fried, add the chicken pieces and fry quickly. When they are fried, take them out of the pan. Sprinkle with finely chopped carrots and greens. Fry everything a little, add flour and toss over the base of the soup.

Add the tomato puree and a little later the cream to get a nice homogeneous sauce. Add the parsley and garlic and a little of all the dry spices which we have sprinkled on the chicken. Finally, put the pieces of roasted chicken back in the sauce. Cook everything together and stir for another 40 minutes for the chicken to soften well. Meanwhile cook the rice and serve.
